Indigo Cow is the first ice cream shop in America to make soft serve using milk sourced directly from Hokkaido. The result is an authentic taste of the silky, rich dessert that’s become a beloved treat across Japan and now available in Los Angeles.
Why Hokkaido soft serve is so special
Hokkaido, Japan’s northernmost island, is celebrated for producing some of the country’s highest-quality dairy. Thanks to its cool climate, fresh air, and nutrient-rich pastures, the region is responsible for nearly half of Japan’s milk production.
That exceptional milk is what gives Hokkaido’s famous “soft cream” with its signature rich flavor, light finish, and irresistibly smooth texture.
A sweet dream that started in Seattle
Indigo Cow was founded by Hokkaido native Keisuke “Kay” Kobayashi, who grew up enjoying fresh soft serve throughout his childhood. After moving to the United States, he couldn’t find anything that captured the same flavor and texture he remembered from home.
That inspired him to open Indigo Cow in Seattle, where he paired authentic Hokkaido dairy with locally sourced, seasonal ingredients and creative flavor combinations. Following its success in the Pacific Northwest, the beloved shop has now expanded to Los Angeles, bringing its signature soft serve to Southern California.
Made with milk from an iconic Hokkaido farm
To recreate the authentic taste of Hokkaido, Kay partnered with Iwase Farm in Sunagawa, one of the region’s best-known dairy farms. More than 200 cows roam freely across its pastures, producing premium milk that’s prized for its rich yet clean flavor.
