In a year that’s seen Jeremy Allen White at the forefront, thanks to his award-winning, standout role in FX’s “The Bear” to the traffic-stopping Calvin Klein billboards that he graced Los Angeles and New York with, there’s a spot that we think deserves a little bit of the spotlight, too.
pasjoli, a Michelin Guide-recognized French bistro, not only shaped Jeremy Allen White’s performance in
‘The Bear,” but also shines in LA’s vibrant food scene.
To fully embody his character, Carmen “Carmy” Berzatto, a chef known for his Michelin-star talent, Jeremy took an intensive culinary boot camp at the Institute of Culinary Education (ICE) in Los Angeles, alongside his co-star Ayo Edebiri. In an interview with ICE, Jeremy shared that after his 10-day training, he went on to work stations at pasjoli in Santa Monica.
pasjoli, located on Main Street in Santa Monica, is the creation of James Beard award-winning Chef Dave Beran. Known for its exceptional French cuisine, the bistro has captured the attention of both Angelenos and visitors, with its “croque Matthieu” being named as the best grilled cheese “in the universe” by the Los Angeles Times.
Jeremy Allen White’s reflection on his experience at pasjoli, highlighting the parallels between acting and the culinary arts: “The way that I look at kitchens, especially at pasjoli’s level and the level that students at ICE aspire to is like a performance,” he says. “It’s not just one cook making a meal and presenting it, you’re working together, you want the environment to be right and you’re performing for your customer or your audience.”
