Amidst this growth, Anaheim’s Downtown Disney District is now home to three new restaurants from Chef Carlos Gaytán, the first Mexican-born Michelin-starred chef, in collaboration with the Patina Restaurant Group.
Chef Gaytán, originally from Huitzuco, Guerrero, Mexico, achieved his Michelin milestone at Mexique in Chicago, where he combined his mastery of French culinary techniques with his Mexican heritage. He now brings his signature style to Anaheim’s Downtown Disney District, introducing three new restaurants: Paseo, Céntrico, and Tiendita.
Paseo: Dining experience that blends cultural legacy and present day
Paseo offers a more refined, yet personal dining experience where Chef Carlos Gaytán showcases his culinary heritage. In a contemporary dining room with rich woods and native Mexican accents, guests can enjoy elevated versions of Gaytán’s childhood favorites like cochinita pibil, a pork dish inspired by his mother’s recipe, and pulpo enamorado, a roasted octopus dish with creamy tuna aioli.

Céntrico: An open, airy spot for socializing
Céntrico’s open, airy space with lush greenery, inspired by Mexican haciendas, creates the perfect backdrop for socializing over their Mexican staples like chicken enchiladas. The bar features creative cocktails like the Ritual Margarita and the El Mariachi in Manhattan, a Mexican twist on the traditional Manhattan cocktail. With its lively ambiance and expansive layout, Céntrico is set to be a great spot for groups to relax and catch up.

Tiendita: Quick-service street food
Tiendita is a quick-service dining option where guests can order through self-service kiosks or over the counter. Diners can also watch the magic behind their meal via a glass-enclosed kitchen window after placing their order.
